| 9 - Ginger Dipping Sauce (Nước Mắm

Ingredients |
- 2 garlic cloves, crushed
- 1-1/2 tablespoons sugar
- 1 fresh red chile pepper, seeded and
minced
- 1 tablespoon grated fresh
gingerroot
- 3 tablespoons fresh lime or lemon
juice
- 3-1/2 tablespoons nuoc mam (Vietnamese
fish sauce)

Combine
the garlic, sugar, chile and ginger in a small
bowl or mortar. Crush the mixture to a paste.2 Add
the lime juice and fish sauce and stir to
blend.
